mini cream puffs

These mini cream puffs are great to invite friends visiting our home. They look so cute and can be eaten whole at a time :D They are made with choux pastry, filled with cream and some berries. I used whipped cream as this is what I often have in my fridge.

Drizzling the puffs with some melted chocolate made them more flavorful to eat.

Chocolate cake, raspberry and ginger chocolate mousse

bánh chocolate, raspberry, ginger chocolate mousse

This cake and mousse is just perfect. I love the way this dessert is presented. This is another first experience of mine with using ring mold to make dessert. To remove the mold after the mousse set, I used the blow torch to warm up the ring mold from outside just a little bit, then I could pull the ring up easily.

I always love the combination of raspberry and chocolate. Not only the combination of taste but also the marriage of the two classic colors made me fall deeply in love with this dessert.

The recipe can be found here.

Raspberry creme brulee

Raspberry creme brulee

I know it is high in energy, it’s fat, but I just can’t stop eating it once I make some. This is a classic creme brulee but I added some fresh raspberries to it. Though I reduced the sugar amount by one third, the custard was still sweet to me. However, the sourness of the raspberries gave some balance to the creme brulee.

I already got a blow torch, so the last step was now easier for me. As it is already sweet, I just sprinkled a little sugar on the custard and used the blow torch to caramelize it.

Apple, raspberry and chocolate clafoutis

Wow, this is another experience with fresh raspberries that made me pleased.

Recipe is adapted from La Tartine Gourmande. It is quite easy to make, so, try making some soon. She took more elegant and stunning pics than ours, so if you want to please your eyes more, visit her site ;)

Lemon Raspberry Mille Feuilles

Lemon Raspberry Mille Feuilles

I do not often have fresh raspberries to make cake or dessert with. Raspberries are expensive here and they do not often look fresh. This time I found them especially fresher than usual, and I couldn’t help buying a small pack of them. Looking at the fresh raspberries in deep red color, I felt so happy. I myself don’t understand why these small things can charm me so much.

Finding this recipe with raspberries from Tartelette, I decided to make this dessert with puff pastry and raspberries. However, I used the ready-made puff pastry since I didn’t have enough conditions and utensils to try making home-made puff pastry.

Recipe can be found here

This dessert really inspired my fiance to take many photos of it.

Chocolate Genoise

Chocolate Genoise

This is our cake for this year’s Valentine’s Day. It took me three days to finish the whole cake because each day, after work and after having dinner, I made each part of the cake and finished it on 13 Feb.

I was totally satisfied with this cake. The taste was wonderful. The presence was romantic too. What most precious was that my fiance and I made this cake together.

I learned the recipe from joyofbaking.com, with some changes.
