
This cake and mousse is just perfect. I love the way this dessert is presented. This is another first experience of mine with using ring mold to make dessert. To remove the mold after the mousse set, I used the blow torch to warm up the ring mold from outside just a little bit, then I could pull the ring up easily.
I always love the combination of raspberry and chocolate. Not only the combination of taste but also the marriage of the two classic colors made me fall deeply in love with this dessert.

This creme brulee is made in the same way as I made raspberry creme brulee last time. Just that I replaced raspberries with blueberries.
I don’t really like the natural taste of fresh blueberries, however, being in desserts or cakes, their taste changes and I love the new taste a lot.

I strongly recommend that you try making this dessert when you have time and gather enough ingredients, though there are only several items. This is one of my all time favourite desserts as it is simple to make and the taste is always wonderful. It is very healthy as well and I don’t have to worry about its fat or sugar content.
It is a kind of sweet soup with the combination of black glutinous rice with yogurt, and when you mix them together, you will have a purple sweet soup. I can have a cup of this soup at anytime of the day. The taste is a well-balanced sourness and sweetness. It’s interesting to chew the rice grains between your teeth. If you are good at recognizing tastes and flavors, you will feel the appearence of pandan essence in the soup as pandan leaves are added to the soup during cooking.
When cooking the rice, I like to let the sticky substances of the rice itself to slightly thicken the soup. Some people use either cornstarch or tapioca starch as thickening agent. I often prefer using tapioca starch.

I know it is high in energy, it’s fat, but I just can’t stop eating it once I make some. This is a classic creme brulee but I added some fresh raspberries to it. Though I reduced the sugar amount by one third, the custard was still sweet to me. However, the sourness of the raspberries gave some balance to the creme brulee.
I already got a blow torch, so the last step was now easier for me. As it is already sweet, I just sprinkled a little sugar on the custard and used the blow torch to caramelize it.

I do not often have fresh raspberries to make cake or dessert with. Raspberries are expensive here and they do not often look fresh. This time I found them especially fresher than usual, and I couldn’t help buying a small pack of them. Looking at the fresh raspberries in deep red color, I felt so happy. I myself don’t understand why these small things can charm me so much.
Finding this recipe with raspberries from Tartelette, I decided to make this dessert with puff pastry and raspberries. However, I used the ready-made puff pastry since I didn’t have enough conditions and utensils to try making home-made puff pastry.

It’s so interesting to eat this dessert after a delicious meal, especially on cool days. I like spices when they combine with other ingredients in both savory and sweet foods.
Banana is also a kind of inexpensive tropical fruit. Besides eating them "raw" as a fruit for dessert, I have only tried making flambe with bananas or used them in cakes. From one of my books on desserts, I found this recipe which is very practical. So I hesitated no more to make this dessert. I was impressed by the deep flavor of the spices in each very tender banana piece. The rum and pineapple juice once again enhance the flavor of the bananas. In this single dish, the combination of different fragrant ingredients make the dessert so special and great in the taste.
But I think this dessert is more suitable to serve on cool or cold days, which is only possible when I return to my home in Hanoi. In Hanoi winter, I definitely make this dessert for my family to try.

Pineapple is our favorite fruit for dessert. Pineapple is not only cheap but is believed to have many good health benefits. Ripe pineapples are rich and deep in flavor, we can enjoy the fruits plain as they are.
When we want to make something different and more interesting into pineapple pieces, doing flambe is a frequent choice. The taste of the pineappes is enhanced to be more flavorful and fragrant by the use of good quality butter, brown sugar and rum. Doing flambe makes a simple and plain fruit become really more elegant and up-standard.
