Mulled pears with ginger and brandy

This has been my very very new experience: pears cooked in red wine and flavored with spices. Though I don’t drink much and very often, but I like wine. I feel excited whenever I try a glass of wine and it tastes good. I’ve never read much about wine and I criticize the quality of wine based solely on my taste and liking. But I do hope when conditions allow, I will learn more about wine and wish to experience the varieties of wine more deeply and widely.

Normally I don’t like eating pears, maybe because the taste is not to my liking. Even when I make cakes with pears, I often don’t feel very interested in eating. When I see pears look so good at markets, I will buy some as my husband loves them. This time I bought some small pears then I decided to try this dessert, which I’ve observed in many websites on the Internet. I followed the recipe in one of my cookbooks titled "Guilt-free desserts" – a collection of low-fat desserts. Then, what I liked most was not the pears but the syrup made from red wine which was enhanced with brandy and other spices.

I toasted some pistachios for decoration purpose and for adding texture to the dish. The pear was very tender and the flavor of wine was very deep, it was absorbed a lot into the pears, which made the pears very special in taste.

Hot spiced bananas

Hot spiced bananas

It’s so interesting to eat this dessert after a delicious meal, especially on cool days. I like spices when they combine with other ingredients in both savory and sweet foods.

Banana is also a kind of inexpensive tropical fruit. Besides eating them "raw" as a fruit for dessert, I have only tried making flambe with bananas or used them in cakes. From one of my books on desserts, I found this recipe which is very practical. So I hesitated no more to make this dessert. I was impressed by the deep flavor of the spices in each very tender banana piece. The rum and pineapple juice once again enhance the flavor of the bananas. In this single dish, the combination of different fragrant ingredients make the dessert so special and great in the taste.

But I think this dessert is more suitable to serve on cool or cold days, which is only possible when I return to my home in Hanoi. In Hanoi winter, I definitely make this dessert for my family to try.

Apple cranberry pizza with coconut

Apple cranberry pizza with coconut

This sweet pizza tastes a little richer than my first apple and raisin pizza due to the presence of dessicated coconut in the topping. As usual, I used thin pizza base and green apples for this pizza. Sometimes, changing the appetite with this sweet pizza is quite interesting. Though, after eating two slices of my tiny pizza, I already felt full.

Not like other meat or veggie pizzas, I can try to finish the whole pizza when I am full, with this sweet pizza, I couldn’t. How much I wished to have some children around me so that I could bake lots of stuffs for them to enjoy and share with their friends.
