Pork, asparagus and baby corn stir-fried

Enjoy this dish of pork and mixed vegetables for a diversed texture of the different ingredients.

 

Pork, asparagus and baby corn stir-fried

Ingredients (serves 4)

- 1 garlic clove, finely chopped

- 1 tsp grated fresh ginger

- 2 tbs soy sauce

- 1/4 tsp ground black pepper

- 1tbs rice wine

- 500g lean pork, cut into thin slices

- 1 tbs vegetable oil

- 1 tsp sesame oil

- 6 fresh shiitake mushroom, thinly sliced

- 200g baby corns, halved (if necessary)

- 150g asparagus, trim and cut into 4cm strips

- 2 tbs oyster sauce

Cooking:

- Combine the garlic, ginger, soy sauce, pepper and wine in a bowl, stir well. Add the pork and marinate for 10 mintues.  

- Heat a little oil in a skillet over medium-high heat, add half of the pork and stir-fry until the meat are just cooked. Remove from the skillet. Add a little more oil, stir-fry the rest of the meat. Return all the juice from the meat to the skillet. N

- Add the asparagus, baby corns and shiitake mushroom to the skillet, stir-fry for 2 minutes then add in the meat and oyster sauce. Cook for another 2-3 mintues.
