I was not impressed when looking at the recipe for these cupcakes. I just decided to make them because I was having some dried apricots and I wanted to use them before they went stale.

However, when I tried the first bite after the cake had been cooled down, I was quite surprised at how it tasted. A mild sweetness plus a chewy texture of the apricot made me immediately fall in love with it. I like eating dried fruits for their concentrated flavors and chewy texture. I loved to enjoy these cake with a cup of tea. 

These cupcakes can be baked directedly on the muffin pan without using the paper cases. However, I have been using my only muffin pan for quite a long time and it has become rather old now, so I believed it would be safer to use paper case for these cupcakes.

Eggplant pizza

This pizza is just so simple to make. The taste of eggplant blending well with the melting mozzarella, plus the fragrance of basil flake made a wonderful bite.

I prefer thin crust than thick one, so again, this time I made a thin crust base and then topped with sliced eggplants. Eggplant should be pre-cooked first to add more flavour to it. Over a frying pan, I fried a clove of garlic with a little olive oil. When the smell of garlic just came out, I added the eggplant slices, seasoned with salt, and cooked just until the two sides of each slice changed their color a bit. Read the rest of this post >>

Broccoli and carrot soup

I had some bread left from last night baking, so I thought of making some soup to finish the bread for my lunch. I could never enjoy a meal without vegetables, so any kind of vegetables should make me find and feel palatable.

Cream soup will be more pleasant to my taste when vegetables are added into it. I toasted the bread slices until they became crispy, then enjoyed them with hot soup. A very full meal for my lunch. But I gained enough energy for continuing with my work for the rest of the day.

After a long day at work, I returned home when my fiance had already made this simple pasta. When I might be late at work, my fiance often cooked me something. And his forever favorite food is pasta. Only with just a few ingredients and simple cooking process, we can have a very appertizing pasta dish.

I really enjoy having pop corn while watching movies. However, I enjoy watching movies at home with my 22” LCD more than going to the cinema. So, whenever I have an interesting movies to see, I will "pop" some corn kernels for movies time. For me, it’s more relaxing siting in my room, or sometimes lying in my bed while watching the movie I like.

This often reminds me of a scene in the TV series " The little house on the prairie" that the Ingalls couple lying on their bed, eating pop corn together while talking about their day, their children and neighbours. What a simple but extremely peaceful happy life!.

I bet everyone who knows something about Korea has heard of this very traditional dish: "kimbap" or seaweed rice. By appearance, it looks quite similar with maki – a kind of Japanese sushi rice rolled in a sheet of seaweed. However, there is a great difference in the taste between these two. Not only the rice tastes differently due to difference seasoning, the stuffed ingredients also vary. Instead of using vinegar and sugar, and sometime a little sake, in making dressing for sushi rice, the rice of kimbap is enriched by a little salt and sesame oil.

I have never had a chance to try a real piece of kimbap in Korea. However, I got my first chance to practise making kimbap in my Korean language class. My Korean teacher taught us to make kimbap in a most simple way. Kimbap is a healthy dish because normally, the amount of vegetables used to be wrapped with the rice accounts for 70 per cent of a whole roll of kimbap. This time making kimbap at home, I used the same ingredients that my teacher advised during our kimbap making session.

Chicken salad Vietnamese style

There are so many ways to enjoy chicken. Salad is often good to our health. So when I find a new salad recipe, I get enthusiastic and decide to try making it right away.

However, this is not a new dish. This salad has typical flavour of Vietnamese cuisine. I like the crunchiness of the dish when I put one bite into my mouth and chewed it. The sound made me feel refreshed by the freshness of the vegetables.

The traditional Vietnamese salad dish often comes a little bit more sour than sweet. It uses lime juice to make it sour because lime juice also add special flavour to the dish. Quite often, rice vinegar is also used, however, it doesn’t add typical flavour but it reduces some undesirable smell from the raw vegetable, if there is any.
